Street food is one of the best ways to (literally) consume local culture. In Canada, our street food differs from region to region – Halifax has donairs, Montreal has poutine, Toronto’s got street meat, and Calgary has prairie oysters (one can only assume). A nod to Vietnam’s French colonial past, the banh mi is a combination of a baguette stuffed with pate, pork bellies or other meats, and topped with cucumber, cilantro and pickled carrots.
